My Mother's Kare Kare Recipe

Kare Kare is a Filipino dish that's a stew with thick savory peanut sauce. This is also my sisters' favorite dish.

Let me share with you how my mom cooked Kare Kare for our dinner. Usually, Kare Kare is made out of oxtail but my mom decided to use beef instead. I'll be listing the ingredients but I won't be able to tell you what the exact measurement is because my mom usually adjusts it by taste. I was assisting her when she was cooking it

Ingredients

Here are the ingredients that she used

  • Beef(Cubed)
  • Eggplant and Beans
  • Nuts, Peanut butter, and Kare Kare mix
  • Onions, garlic,
  • Salt, Sugar, Beef Bouillon cube, Glutinous Rice Flour, and Pepper

How it was cooked

The day before she made it, we prepared the beef. The first thing that she told me to do is to put oil in a pan then heat it. She told me to add pepper to the oil and then add onions. When the onion softened, I added the garlic and let it fry a little.

When everything was cooked I added the beef and stir it until it was brown.

We then transferred it to the crockpot because we have no pressure cooker. She added water to the pan where the beef was stirred and added a Beef Bouillon cube. This was then poured inside the crockpot. And it was left cooking overnight.

During the next day, I checked on the beef when I opened it, it was really fragrant. We then had to remove the excess oil on top that it produced.

The vegetables were prepared and we sliced them into smaller bits. The eggplant was placed on the water while preparing so it wouldn't oxidize and turn black. My mom told me to thoroughly check the eggplant while it's being sliced because there are some parts that were infested by worms.

After all the slicing, the vegetables were deep-fried to make them more flavorful. This step also took really long

While they were deep-frying we got another pot to cook the Kare Kare in. My mom told me to cook onions and garlic again. While she was preparing the kare kare mix. When the onions and garlic were thoroughly cooked she then added the mix to the pot and added a little bit of water and the stock from the crockpot. From there I had to smash the nuts that were available.

She then added the nuts, peanut butter, and sugar.

On the other pan, my brother toasted the glutinous rice powder, then it was added to the pot to make the consistency of the sauce thicker. From there, the beef was added and my mom was adjusting the taste to her preference.

Lastly, the vegetables were added to the pot.

Here's the final product. This meal is best served with rice. It is also usually served with shrimp paste. This meal has a really distinct flavor but it's also delicious at the same time.

When I ate this, the beef was really tender and the sauce just tasted delicious. I ate 2 plates of it because it was really good. Right now, we just cook this occasionally because the price of beef is high. And making this will really consume your time. But this will meal truly be worth it.

Realmente se ve delicioso. Esa salsa espesa con sabor a maní junto con los guisantes y aliños debe tener un gusto muy sabroso al paladar. Me encantaría probarlo. Imagino entonces que es un platillo especial para ocasiones particulares.
Me llamó la atención que puedes comerla acompañada también con pasta de camarones, esa sería otra receta aparte? Sería preparar la pasta con camarones?
AquI comemos carne de res acompañada con mariscos en una Parrilla que llamamos Mar y tierra!!! Demasiado buena!
