Sabudana/Tapioca pearls vada

Sabudana/Tapioca pearls are widely used as a breakfast ingredient. These are small pearl like balls that can be used to make a variety of dishes. These are most commonly used in Maharashtra belt of India but off late, I’ve seen them commonly in other regions as well.

I personally love Sabudana and they form my breakfast atleast once a week. These Sabudana vadas taste best when deep fried. But being a diet conscious person, I prefer shallow frying with minimum oil. But if you have guests at home and you wish to serve them these vadas, fry them for a delicious, crunchy experience.

These vadas can also be used during fasting. Just don’t add onion since most people refrain from consuming onion and garlic during fasting. Let’s see how we make these.

Ingredients

1.Sabudana150 gms
2.Onion1 Unit
3.Potato3 Units
4.Ginger1 Small piece
5.Green Chilly2 Units
6.SaltAs per taste
7.Black Pepper PowderAs per taste
8.Cumin1 TBSP
9.Olive OilFor Shallow frying

Method

Step 1: Soak the sabudana in water for about 2 hours.

Step 2: Boil the potatoes and peel the skin.

Step 3: Once the Sabudana absorbs all the water, add to it mashed potatoes, chopped onion and green chillies and grated ginger.

Step 4: Add salt, pepper, and Jeera and mix well.

Step 5: Use small portions of the mixture to prepare flat disc like shapes.

Step 6: Heat 4-5 tbsp oil in a non-stick pan. Add the Sabudana vada prepared and cook on low flame.

Step 7: Turn around to cook from both sides. Vadas will turn crispy. Serve with Mint Chutney.

Love vadas, such a delicious snack. We make them from cassava sometimes here in Suriname, mostly because that's a cheap and available local ingredient.
