Today I'd like to share with you my absolute favorite way to prepare eggs! I've made eggs this way for several years now, and I love it because I can make it very quickly, it's super simple and easy to make, it's incredibly versatile, and it's delicious. I eat it at any time of day of night. It's definitely not just for breakfast!

The recipe and way of preparing egg torts here should only be used as a spring board for further creativity and experimentation. This is a super simple way that I've been digging lately. They can me made as simply or as all out as you'd like! They can be made with melted cheese or various sauces, they can also be eaten alone, or in tortillas or nori wraps, the possibilities are truly endless!

These are the very simple ingredient: eggs, sea salt (I prefer pink Himalayan), onion, and tomato, and some oil for cooking (I prefer either virgin olive or unrefined coconut oil). In terms of tools, I only need a small bowl, a fork for whisking, a good knife for cutting the tomato and onion, a cutting board, a plate, a pan (I strongly prefer cast iron), and of course a working stove.

Only one egg is needed to make each tort. Crack it in a bowl, add a pinch of two of sea salt, and whisk well.

As the pan is heating, aside from whisking the egg, I chop half an onion and half a tomato.

When the pan is good and hot, I add a little olive oil, coat the pan fully, and then I pour in the egg, moving the pan to spread it around a bit. I let it cook on this side until it begins to solidify.

Once it cooks for a minute or two, I gently flip it with a spatula and let it cook for maybe about half a minute, then it's done! I take it out of the pan with the spatula, put it on the plate, and pour the next whisked egg in, making sure there is still sufficient oil. I usually make three at a time, as that's usually the perfect amount to satiate me.

Once all three egg torts are done, I arrange them evenly on my plate, and then begin to add the onion and tomato.

I use the knife to collect and distribute the onion.

And there you have it! Egg torts with raw onion and tomato!

In the moment I decided to add some raw greens, in this case ketuk, a nutrient-dense edible green that we have planted all over the property. This was my dinner this evening, and boy did it hit the spot!

I never thought I'd be learning how to make egg in a different way any time soon.

As I was reading through your procedures all I could think of was "when are the onions and tomatoes going in?"πŸ˜…

I make my eggs in a similar way but the onions and tomatoes go into the pan with the egg.

When I say that my body is craving something, I mean that I'm getting clear signals to eat something to that would benefit me. I'm not talking about 'comfort foods' which are often not good for us. Unfortunately most people have no idea what's good for them because they're so disconnected from their bodies, and they can't tell the difference between messages from their body and addictive sort of 'cravings' many people mean when they use that word. I just mention all that because I feel strongly that we should always heed our body's messages. 😁 πŸ™ πŸ’š ✨ πŸ€™
