🌿 Swamp Spinach Sour Soup W/ Bean Curd 🥣 An Ital Recipe

Hi dear Hive friends, I want to share my Swamp Spinach Sour Soup for the @LotusShares Plant Power Weekly Cooking Challenge. The swamp spinach is a very healthy green vegetable. In my country Cambodia we call this soup Somlor M'Cheu Kreung.

Normally, this recipe is made with beef, chicken, fish, or pork, and many people don't use coconut milk like me. I think there are a little bit of people using coconut milk, but they don’t make it vegan or use bean curd skin and snow fungus like me.

In my country I love to make this food with oyster mushrooms or straw mushrooms because we have a lot of them at our markets and because I love to eat mushrooms too. Now I have only bean curd skin so I try to make it this way, and it was delicious together.

👩‍🍳 Swamp Spinach Sour Soup (Ital) Recipe 🔪

វិធីធ្វើសម្លម្ជូគ្រឿងត្រកួនបួស

Ingredients

  • 2 lemongrass stalks
  • 3 kaffir lime leaves
  • 1 small piece galangal
  • 1/2 tsp turmeric power
  • 3 dried chilis
  • 3 red fresh chilies
  • 2 cloves garlic
  • 1-1/2 tsp salt or to taste
  • 1 tbsp brown sugar
  • 1-1/2 tbsp soy sauce
  • 1 cup coconut milk, or as you like
  • 1 bunch swamp spinach (morning glory, kangkong)
  • 50g bean curd skin
  • 1/2 of a snow fungus
  • 5 tulsi stems, or as you like
  • 2 cup water
  • 2 tbsp tamarind meat + 1/2 cup hot water

Soak bean curd skin and snow fungus in the water until soft and remove them from the water and cut it. Soak tamarind in the hot water five minutes, and after mix it well and use only its water.

Pick holy basil and use knife to hit water morning glory a little bit, then cut short as you like, then soak it in the water.

Cut lemongrass, chili, lime leaves, galangal and grind them with 1/2 tsp salt, turmeric powder and a little bit water.

Step 1

Heat oil and fry paste until smells aromatic.

Step 2

Then pour a little coconut milk and stir it.

Step 3

After put bean curd skin and snow fungus, then fry a little.

Then add salt, sugar, soy sauce and tamarind juice. Stir it, then pour water.

Step 4

After boiling, remove morning glory from the water and put in the pot, add all coconut milk, boil a little bit.

Step 5

After taste and add holy basil and stir it.

It’s ready.

@sreypov your recipes always look so delicious. I'm bookmarking this one. I may not be able to get swamp spinach, but I'm sure I can find something to substitute.

Very interesting this recipe. What caught my attention is that you have integrated different flavors in a dish, as we do in Venezuela: salty, sweet, sour; also various textures provided by the ingredients you use. The combination of coconut milk with tamarind looks very striking, I have to try it, especially now that my tree is loaded with many tamarind fruits. Lo que me llamó mucho la atención es que has integrado diversos sabores en un plato, tal como hacemos en Venezuela: Salado, dulce, agrio; también diversas texturas aportadas por los ingredientes que uitlizas. Se ve muy llamativa la combinación de la leche de coco con el tamarindo, tengo que probarla, especialmente ahora que mi árbol está cargado de muchos frutos de tamarindo. I can't see your posts or Jutin's posts, because it will always make me hungry hahahah. Even in the preparation of the dish, in that mixture I would eat it without cooking it. I didn't know this recipe, it looks fantastic.
