Roasted Cauliflower

I tried to make this dish for the first time. And I said to myself, if it works, which means that if everyone eats (usually part of the family doesn't like cauliflower, broccoli, etc.) then I've succeeded and I'll keep doing it.
But if it stays on the plates then we will skip this dish in the future ...

It is a vegetarian dish in which cauliflower is used instead of meat and, according to everyone I have read or watched, it is just as tasty as eating a dish with meat.
This recipe is one of my own combinations, in which I have only followed the indicative cooking times and temperatures, everything else is improvised.

So, we need the following:

  • 1 medium head (up to 1 kg) of cauliflower
  • 1 onion
  • 2 tomatoes
  • 3 cloves of garlic
  • 1 deciliter of olive oil
  • salt and pepper

and spices, I chose:

  • curry
  • marjoram
  • thyme
  • turmeric
  • cumin

Preparation:

First, clean the cauliflower and cut away all the leaves. Wash the leaves and cut them into pieces.

Then prepare the marinade with which to coat the cauliflower. Pour half a liter of olive oil into a cup and then add a teaspoon of each of the spices you have prepared.
As far as the spices are concerned, this is completely personal, of course, you can add other spices, but this combination suits me, maybe not everyone.
Salt and pepper should also be added to taste. If the marinade is too thick, add a little more water.

Coat the head of cauliflower well with the herb marinade you have prepared. Repeat several times.

Now cut the rest of the vegetables, the cauliflower leaves we have from before, the onions, garlic, and tomatoes into large pieces, not finely.

Turn the oven to 200 degrees Celsius. Take a medium-sized baking sheet, line it with baking paper (it's not necessary, but I always do it because it's easier to wash the baking sheet later...), and put the onion slices and tomato slices in a row, then add the garlic pieces.

In the second layer, place the pieces of shredded cauliflower leaves, arrange them and place the marinated head of cauliflower in the middle.

Cover the cauliflower pan with aluminum foil and place in a preheated oven for 40 minutes.

Then remove the foil and put it in the baking tray for another 20-30 minutes to bake a little more. It can be even less if the cauliflower and vegetable side dish are already soft enough.

After 20 minutes, more or less, when it is considered sufficiently cooked, remove it from the oven and leave it to rest for a while to cool.

Now just slice and serve. It can be eaten as a side dish or as a main course.
