You are in for a treat -Red Gravy Cashew curry with whole Wheat Naan!!

I enjoy something to create amazing things and bringing ingredients together. Cooking is a therapy. It increases happiness if our mood is low. So guys if anyone are suffering from anxiety, stress and low mood then enjoy spending time in kitchen. It could help to increase happiness😀.

Anyway Today I thought to make Rich and insanely delicious Red Gravy Cashew curry or kaju curry masala. This is rich,creamy, heavy food so we used to eat this in lunch time and avoid to eat at night.
If you have never had kaju Masala then do try this recipe for any Occasion. It is also mild and not spicy, so its perfect for kids.

It goes well with Naan/plain chapati or Paranthas.

Lets see how to make this recipe-


Serving 4

INGREDIENTS-

For curry-

Cashew-⅔cup
Oil-2 tbspn
Onion-½cup
Tomato -1cup
Garlic -7 to 10 pods
Ginger-½inch
Redchili powder-½tspn
Turmeric powder-½tspn
Salt-to the taste
Garam masala-½tspn
Cream(optional)-½cup
Poppy seeds-1tspn
Clarified butter-2 tbspn
Cinamon stick-2
Cardamon-2
Bay leaf-1


FOR Wheat Naan

Wheat flour-2cup
Oil-1tbspn
Salt-½tspn
Baking soda-½tbspn
Sugar-½tspn
Curd 1cup
Water-as needed


METHOD

1.heat butter in a pan.

2.chop tomatoes, onions and ginger.

3.add onions.

4.stir it and add garlic pods

5.now add tomatoes and ginger.cook it for 10 mins till they are soft.

6.take soaked poppy seeds and strain it.

7.Cool the mixture and now in a mixer grinder add poppy seeds along with cooked tomatoes and onion.

8.make a fine smooth paste without adding water.

9.now in a same kadhai add oil or butter.

10.add cumin seeds, cinnamon stick, cardamon and clove.

11.now add bay leaf

12.further add chopped onions.

13.saute it for 2 mins.

14.now add the paste.

15.add salt, turmeric powder, redchili powder and coriander powder

16.stir it and cover the kadhai with lid and cook the paste thickens.

17.keep the flame in low and stir it.

18.now roast the cashews in butter and keep aside.

19.further add roasted cashews, cream and water.

20.now mix well and cook for 10 mins in low flame till the cream combines well.

21.add garam masala.

22.off the flame and add kasuri Meethi. Its optional. You can add coriander leaves.

23.transfer the curry in a bowl.


For whole wheat Naan

1.in a platter add wheat flour

2.add salt, sugar ,baking soda and baking powder.

3.add curd and oil. Mix all ingredients well and knead a dough with the help of water as needed. Keep the dough for 45 mins to 1 hour.

4.after 45 mins divide the dough into small size balls and roll it.
Sprinkle some nigella seeds And roll it. Heat a iron skillet and sprinkle some water then put Naan and cook it.

5.When you see the air pockets appears.

6.then flip the Skillet directly on the open flame and cook it while rotating the tawa.

7.remove from the flame

8.and apply butter.

9.now serve the Naan with Kaju Masala curry!

The Kaju Curry taste best when served warm with hot Naans.

This cashew curry looks so delicious. I enjoy eating cashew nuts but never thought of it as an ingredient in making sauce.
