Winters Special- Gajar Matar ki sabji(carrot and green peas stir fry)

Winters arrived and we all want to have lots of winter veggies.
In bengaluru the red carrots are seasonal. We dont get the red carrots in summer but only in winter season from december to February. Yeah, the orange carrots 🥕 will be all time in season. So,these 2 to 3 months i want to garb red carrots and make all winter special Gajar Matar ki sabji.
A simple Carrot and peas stir fry are perfect for lunch or dinner and goes well with Rotis.

My mother used to make Gajar Matar ki sabji thrice in a week when winter comes.😅 and we dont get bored of eating it because we all love carrot and peas combo.
Sometimes for different taste she add cauliflower with carrot and peas, potatoes with carrot and peas. But carrot and peas will be the main ingredient for her. We would eat lot of carrot and peas but only in winters. In India red carrots are seasonal veggies which we get in winter season only.

I made Gajar ka Halwa also that I already posted it and today I made Gajar Matar ki sabji for my hubbys lunch box.
I like the simple way 😌 to comsume this curry only with the basic spices and without adding onion and garlic.

This is pure Vegan dish and you can make it gluten free without adding Asofedita.

So lets see how to make this simple Indian Gajar matar ki sabji.


INGREDIENTS-

▪︎carrots-1 cup
▪︎peas-½cup
▪︎cumin seeds-½tspn
▪︎asofaedita-½ tspn(optional)
▪︎greenchilies-1
▪︎salt- to the taste
▪︎turmeric powder-½tspn
▪︎redchili powder-½tspn
▪︎corinader powder-½tspn
▪︎dry mango powder-½tspn
▪︎coriander leaves- for garnish.


METHOD

1.take peas and wash them properly.

2.peel the carrots and cut the edges.

3.chop the carrots.

4.heat oil. I have used mustard oil because we only used mustard oil in cooking.

5.add cunmin seeds, asofoedita and green chilies.

6.add carrot.

7.add turmeric powder and red chili powder.

8.add salt.

9.then mix it.

10.add boiled peas. Cover it for 5 to 10 mins. The carrot are cooked fast if they are fresh.

11.Now mix coriander powder and dry mango powder.

12.give a nice mix and off the flame.

Transfer it in a bowl and its ready to serve with garam garam rotis!!
