Gajar ka halwa(Carrot pudding)-The sweetest affair at any day!!

Today is last day of the year 2023!

So lets end this year with sweet and delicious Gajar ka halwa.

Halwa is very popular in India. In every festival or occasion Halwa will be a must dish. Like Lentil halwa(moong dal halwa) wheat flour halwa(ata halwa), semolina halwa(suji halwa), bottle gourd halwa(loky halwa) etc. I am a big Halwa lover😍.

Gajar ka halwa is a very popular North Indian dessert and loved by all across the Globe .May the making process of Gajar ka Halwa is different in many states but once you taste this you will fall in love at the first bite.

And I guarantee you after one bowl you will ask for one more😍.

Gajar ka halwa can also be made in Pressure cooker but genuinely speaking I dont like that. My mother used to make in Open wide kadhai. So I prefer this method only. So do try to make this process and it will win your heart! ❤

Lets start to Make Gajar ka halwa-


So for this we need

carrot- 1kg
Milk-1½ kg
Sugar-250gm
Ghee(clarified butter)-100 to 150gm
Nuts-½cup
Cardamon powder-⅓tspn for the taste.


METHOD

1.take fresh red carrot which are juicy. I have used traditionally red carrot because it will give authentic color to the halwa.

In some country red carrots are unavailable then you can take orange coloured carrots also.

2.then peel the skin of the carrot.

3.and cut the both edges of the carrot.

4.now grate the carrot with grater. My daughter is helping me without any fear😆. After that I have to took that.

5.Grate and keep aside.

6.now heat a kadhai and add ghee.

7.now add grated carrot and saute it for 10 to 15 mins in low meduim flame. Stir accasionlly. Unless it will burn.

8.after that add milk.

9.stir it. Keep the flame meduim.

10.stir it occasionlly so that the carrot donot stick to the bottom.

11.Cook till the milk is reduces and carrots are cooked well.
It will take 30 to 45 mins. So you need patience here for the best result.

12.now u can see the milk thickens or reduced. Mix well so that everything is combined well

13.now in a mortal pestle crush some nuts.

14.now add these nuts and mix it.

15.when the milk is absorbed completely then add sugar.

16.mix sugar and cook for another 10 mins. Till the sugar dissolve and thickens.

17.The halwa thickens and ghee releases . A nice aroma of halwa will come and and you can't stop to have it....😂

Its ready!!

18.now add some cardamon powder. Transfer it in a bowl and garnish it with more nuts.

Finally enjoy Gajar ka Halwa chilled or warm as per your taste. In winters it is served Warm/Hot..

You can store this carrot pudding for 10 days in refrigerator and for a month in a deep freezer in air tight jar.
