Zoodles!

Hello V-Gang!,

This week I am continuing my healthy detox and that means to avoid wheat among other things as much as possible. This leaves me with a conundrum as I love pasta dishes and spaghetti. You can buy gluten-free spaghetti, but it is usually made from corn that is on my to avoid foods list too.

Therefore I was searching for an alternative and came across Zoodles. They are noodles made from zucchini and I love zucchini.


There are a few different methods to create them, but the method I opted for was to use a spiraliser. I picked up a cheap one on Amazon for €10.


With the spiraliser ready, I was ready to create my first Zoodles. I decided to make with a tomato garlic sauce.


My ingredients are (to serve 1):

  • 2 Small Zucchini
  • 1 Small Onion
  • 2 Mushrooms
  • 3 Cloves of Garlic
  • 1 Tin of Tomatoes (Chopped or Plum)
  • 2 Tablespoons of Tomato Puree
  • A couple of Tablespoons of Olive Oil
  • 1 Tablespoon of Basil/Oregano Spices
  • 1&1/2 Tablespoon of Brown Sugar to taste
  • 1 Small Carrot

I realised I forgot to grab the tomato puree and garlic that I added. So made an extra photo here.

So after gathering the main ingredients, the first thing I did was put the spiraliser together and figure out how it works.


It was pretty straight forward to put together and I was ready to create my first Zoodles.


At first I used the blade already in, but realised I needed to add a different blade to make the zoodle shape. Once in, the Zoodles were created very quickly!

I soon had my first plate of Zoodles from the first zucchini.


Next I chopped up not so finely the small onion and tried to saute it with just some water to be healthy and not use so much oil.


Into the mix I added to chopped up mushrooms and some thinly cut carrot.


Once the onion was no longer clear, I added in the tinned tomatoes with around 150ml of extra water.


To make it more tomatoey, I added two tablespoons of tomato puree.


After that was simmering for a few minutes, I added in the brown sugar and spices from earlier. I left this to simmer for around 20 minutes.


I then created more zoodles with the last zucchini. Once ready, it was time to saute them in a pan for 2 minutes to heat them up.


Here you can see how long some of the zoodles were.


I added some olive oil to a pan and heated it up before adding the zoodles to it.


I put on a strong heat for around 2 minutes, important to not saute them too long. Other options are you can boil them like regular pasta or eat them raw. The raw option was quite tempting for me to be honest.


The final dish was very tasty and eating the noodles was very similar to regular pasta 😀.

Sorry, it's just not the same. We do a similar substitution as well as dishes with spaghetti squash and while they are all tasty in their own right, I don't feel like it's an acceptable substitution. Maybe that's why I am so fat! Actually, we have been eating this pasta from a company called Fiber Gourmet. It costs more, but since we have started cutting how much pasta we eat anyway, it hasn't been too bad. We probably end up paying the same amount because we are eating less.

Yeah, I can see your argument there. I mean pasta is pasta and has it's own taste and everything. It for sure is still a good dish in it's own right and italian style if you do a nice sauce. I didnt hear about Fiber Gourmet, I will check it out.

I'm not sure you can get it there, but it is much higher fiber and lower carbs I think. Yeah, high fiber and protein, low calories and carbs. It doesn't taste that bad either.

Im confused if we should eat more or less carbs. I try to reduce my fat content but it isnt easy.

I think most everything is fine in moderation. It's amazing how big of a difference portion control can make when you are trying to watch your diet.

A local fast-food restaurant called Noodles and Company has zoodles on their menu. I may have to give them a try.

I really enjoyed my Zoodles today and can for sure recommend them. We dont have any restaurants making them here as far as I know. Combining them with pesto looks really interesting though.

The zucchini pasta is excellent and accompanied by a good sauce like this Uff!!! exquisite, I would only take away the sugar.
I congratulate you because you are detoxifying your body, when it comes to health you have to be focused and radical with food, there are many delicious alternatives... little by little, go ahead.

Thanks, it was very tasty and I will be making it again soon. Detoxing the body isn't easy, but I am determined to see it through and avoid all the processed foods as much as possible :)

I know... I know that way. So step by step but firm in your decision. I suggest you green juices, lots of water, sleep very well and a delicious diet are fundamental pillars.

I you do, look for whole-grain rice pasta, there's no big diff from the wheat ones.

I heard about noodles but I never heard the Term Zoodles
Well, it is looking similar to noodles. It is looking like spiraliser made your work easy.

"Zoodles" is a new dish for me. It is very family to noodles and spaghetti. It is very challenging to avoid wheated food. Good luck for your diet goals.

One must be health conscious and aware of the nutrition body needed.

Oh yeah! I forgot about how much I love zoodles. I left my really good spiralizer in Mexico years ago. I bought another one similar to yours but it's difficult to use. It was a used item. I almost threw it away but your zoodles inspire me to give it another try.

It's such a great way to have a light carb free lunch. Looking deeeeelicious!!!!

I am really happy with this investment, I hope to spiralise also some carrots and cucumbers and spice up the presentations of my salads.

The Zoodles were tasty and filling but you felt still light and not bloated like with pasta which is great!

The spiralizer I left in Mexico was 50 dollars and it really was a good investment like yours but now I don't feel like spending the money on it. I am going to try the one in the closet again. It was difficult last time but now I'm going to try it again. I have zucchini in my fridge and I really prefer raw zucchini if it's a zoodle.

That sounds like a pricey one. Mine was only €10 on Amazon, but it works pretty well so far. I didnt too often eat raw zucchini, but now spiralised, It makes it more attractive!
