A good day to make soup

Its February and in my mind that means it's time to make soup, even though the temperatures feel like spring and we had our first tornado warning of the year this week. But a delicious pot of homemade soup is always good! Especially when you add some smoked kielbasa sausage to the pot, and some potatoes, and lots of savory seasonings — this feel-good, hearty, delicious soup reminds me of the cabbage soups my grandma used to make when I was a kid.

I wish I could squeeze you all around my table and ladle you up a steaming bowl for yourself right now. I have plenty to share!

1 pound kielbasa sausage, sliced into bite-sized pieces

2 tablespoons olive oil

3 medium leeks, white and pale green parts only

carrots, diced

celery, diced

1 small green cabbage, chopped into bite sized pieces.

3 cloves garlic, minced

6 cups chicken or vegetable stock

1 pound red potatoes, diced

1 tablespoon Italian type seasoning

1 bay leaf

You can use any type of sausage, brown it up and set it aside.

Add the olive oil, carrots, celery and leeks to the pan and saute for about 5 minutes. Add cabbage and garlic and saute for few more minutes.

Combine sausage, and sautéed vegetables into a large stockpot

Add raw potato chunks

Add broth and spices and cook until potatoes are done

Remove bay leaf before serving.

Enjoy!

I love it, except I'm reading subtitles and if I take my eyes off the screen I miss something! It forces me to pay attention! I watched another series a few weeks ago called Miss Firmans War. It was about women's suffrage in Sweden and it was the same. Subtitles kept my eyes glued to the screen. I am learning a lot of world history that I never knew!

Hello friend, welcome I missed you, we like to have the kitchen warm with rich preparations like this excellent soup, it is always nice to take them in watching a good series hahaha, if you invite me I take the breads or better yet we make them while the soup is ready. 😊🤗

You have to put a note on the fridge that says: I must take pictures before eating the recipe hahaha, don't believe it has happened to me that after making the recipe, we eat it and the photo of the dish is missing hahaha.

Add a few red pepper flakes if you like food a bit more spicy. It's easy to make. I love having leftovers, too!

That soup looks hardy and delicious! Kielbasa goes in so many things. I bet this would be good as a cream soup too. This looks pretty simple tp make and I can smell it already. I might have to keep this in the back of my mind for next time I make soup. Thanks for sharing xox

an interesting solution. Fried sausage in the soup. As a child, we cooked a similar soup with sausage, but we did not roast it.
Polish sausage in the USA?
Another interesting detail is the use of ready-made broth for making soup. But would it be better to cook the chicken and use this broth? But also, of course, you need a chicken that ran outside and not sat in a cage on a poultry farm. It will be the most delicious and rich broth. It will really be the same soup that our parents cooked in childhood.

I completely agree with you about homemade broth and free range chickens. The canned broth was simply for convenience. I have to make more chicken broth and put some in the freezer to have on hand.

There is a huge population of Polish people in the US. I read that 10 million Americans are of Polish descent. Cabbage rolls and pierogi are pretty common foods around here!
