Pav Bhaji - The beloved dish from the streets of Mumbai..

Hope you are healthy, happy and spending your day well.

Today I want to share with you the recipe of Pav Bhaji - A delicious Indian vegetarian delicacy Which includes the thick vegetable curry " Bhaji " served with square shaped bread bun called Pav. Pav Bhaji originated from Indian state Maharashtra. This is one of the most loved street food in Mumbai.

Ita a unique dish which includes the flavours of different types of vegetables and softness of freshly baked Pav Bun. If you will try this dish once, you will fall in love with the taste and crave for more.

This is my healthy version of Pav Bhaji as I included more veggies into it and tried to keep it less buttery.

So lets start the recipe without any further delay..

For Pav Bhaji we need

• Potato : 5 Nos.
• Grated Cauli Flower : 1 Cup
• Fresh Peas : 1 Cup
• Fine Chopped Capsicum : 1 Cup
• Grated Ginger & Garlic / Ginger Garlic Paste : 1 Table Spoon
• Fine Chipped Tomatoes : 1.5 Cups
• Fine Chopped Onions : 1.5 Cups
• Fresh Coriender Leaves : For garnishing
• Oil for Cooking : 2 Tablespoon
• Butter : 100 Gm
• Pav Bun : 6 Pcs

Dry Spices

• Pav Bhaji Masala : 2 Table Spoon
• Kashmiri Red Chili Powder : 2 Teaspoon
• Turmeric Powder : ½ Teaspoon
• Amchur Powder : ½ Teaspoon
• Garam Masala : ½ Teaspoon
• Salt : As per the taste

Preparation

Boil potatoes and remove the skin. Fine chop tomatoes, onions and capsicums. Boil capsicum and peas together so that it can be mashed properly. Grate cauliflower prepare ginger, garlic paste or grate it in a grater. Wash coriander leaves and chop roughly.

Let's cook Bhaji first

Heat oil in a pan, when oil is hot add chopped onions and fry it, add ginger garlic paste and fry until turns brown and raw aroma goes. Keep some chopped onions aside which we will use at the time of serving.

Add tomatoes and cook it well until tomatoes are soft.

When the tomatoes are soft, add turmeric powder, coriander powder.

Then add Pav bhaji masala and mix well. I used Everest pav bhaji masala here.

Add Kashmiri red chili Powder which will give bhaji a nice red hue without making it very spicy. I wanted to keep bhaji less spicy so that my kids can enjoy it.

Next add grated cauliflower and boiled and mashed peas and capsicum.

Mash the boiled potatos with your hands or with the halp of masher and add mashed potato into it and mix thoroughly.

Mix.. Mix.. Mix..

Add water to adjust the consistency.

Add little garam masala and cook it for 5-7 more minutes on medium flame.

Now the bhaji is almost done. Switch off the flame and add one square piece of butter to give it buttery taste and add chopped fresh coriander leaves.

Bhaji is ready. Now we will fry the pav in the butter before serving.

For frying pav, add butter in the pan, when it melts add little pav bhaji masala. Cut pav into halve and fry it in butter mixed with pav bhaji masala.

Pav bhaji is ready to serve. Serve it with fine chopped onions and lemon slice.
