Cheesy Corn Capsicum Pockets

How are you today. Hope you are relaxing and spending your Sunday peacefully.

Here's I am back with my new creation - Cheesy Corn Capsicum Pockets.

Its a very simple yet tasty recipe and perfect evening snack. I made the baked version of these pockets, I have a mini oven which I am not using much and for these Pockets I used that oven. We can make the fried version also of these pockets.

Lets get started with the preparation and process.

For making 6 nos of Cheesy Corn Capsicum Pockets we need :

  1. Spring Roll Sheets - 3 Sheets
  2. Green Capsicum or Bell Peppers - 2 Nos
  3. Corn Kernels - 1 Cup
  4. Spring onions (Scallions) - 1 Small Bunch
  5. Garlic - 15 Cloves
  6. Grated Mozzarella Cheese - 1 Cup
  7. Oil - 1 Tablespoon
  8. Salt - As per the taste
  9. Dried Oregano - 1/2 Teaspoon
  10. Red Chili Flakes : 1/2 Teaspoon
  11. Black Pepper Powder : 1/2 Teaspoon

PREPARATION

Take the required no. of spring roll sheets out of freezer to defrost at least 30 minutes before cooking. Chop capsicum, sprig onions into small pieces and crush garlic.

PROCESS

To make the filling, heat oil in a wide pan, add crushed garlic and fry until turn light brown.

Add chopped capsicum, spring onions and corn kernels into the pan and stir it well. Keep the flame on medium to high.

Add black pepper powder, little salt and mix. We will just cook these vegetables for few minutes as we don't need to to make them soggy and soft. We need to maintain the crunchyness of the vegetables.

Add dried oregano and chilli flakes, mix and switch off the flame and cool down on room temperature.

Once its completely cool, add grated mozzarella cheese and mix properly so that everything combines together.

Our filling is ready, now let's prepare the pockets.

Take the spring roll sheets and cut into half. Put the filling on the sheet and fold it in the desired shape. Repeat the same and prepare all the pockets. As we are baking the Pockets we don't need to seal the pocket but if we want to fry the pockets then we will need to seal it with slurry made of plain flour and water.

Preheat the oven for 5 minutes on 150 degree. Place the ready pockets on the oven tray and brush the butter on the pockets.

Put the tray inside the oven and bake it for 15 minutes until it turns golden in colour.

Take the tray out of the oven. It turned crispy and golden brown in colour.

Our Cheesy pockets are ready to serve. Serve hot with any dip or tomato ketchup.

You can also cut the pockets into desired shape before serving.
