En effet, nous allons parler d'une activité que l'on fait de temps en temps chez un paysan pas loin de chez nous, pour gagner un peu d'argent en fin de mois.

Il nous appelle aussi de temps en temps quand il n'a personne.

Nous allons parler d'une activité peu aimée des gens, et pourtant tout mangeur de viande a conscience de ceci.

Nous allons parler de l'abattage des poules. Pour les manger, il faut d'abord les tuer, ce qui est logique.

Pour commencer, il faut les attraper, les mettre en cage par groupes de 6. Une fois les 6 dans la cage, nous mettons un drap sur celle-ci. Les poules ont comme avantage que si elles sont dans le noir, elles s'endorment en quelques minutes, ce qui rend la tâche suivante plus simple. Chaque paysan a sa méthode d'exécution. Là où je suis allé ce matin, il les tue avec un pistolet électrique sur le haut de la tête. Il ouvre le haut de la cage, met sa main avec le pistolet, appuie sur le bouton et hop, en 5 secondes, c'est fini. Les 6 sont tuées en moins d'1 minute sans douleur (enfin, ce n'est pas sûr) pendant qu'elles sont assoupies.

Une fois cela fait, mon rôle était de les suspendre à l'envers, la tête dans un entonnoir, puis de mettre un pic au fond de la gorge pour percer la glotte, ce qui fait que le sang s'évacue dans un bac prévu à cet effet.

Ensuite, la personne juste derrière coupe la tête, les pattes, et enlève les plumes avec un appareil prévu pour ça.

Et la dernière étape consiste à plonger la main dans la poule (comment dire, par l'arrière), puis d'un coup sec, vider tout l'intérieur, récupérer les gésiers qui se mangent, passer un coup de jet d'eau à l'intérieur pour vider proprement, et hop, au four pendant 10 minutes. Voilà, prêt à être vendu au commerce local, bien emballé.

Un métier rapide et bien rémunéré pour le peu de temps que ça prend, mais que personne ne veut faire.
