🏵️Semolina Vegetable Porridge🌿

How are you all? I hope you are happy and healthy. Today i will share a recipe of semolina vegetables porridge.
This versatile dish can be customized with various vegetables to suit individual tastes. Here's a simple recipe of semolina vegetables porridge.


Ingredients:
🪴 1 cup suji (semolina)
🪴 1 small potato , peeled and diced 🪴 1/2 cup diced pumpkin
🪴 1 onion, finely chopped
🪴 1 green chili, finely chopped
🪴 2 tomatoes
🪴 1/2 cup peanuts
🪴 2 tablespoons oil
🪴 1 teaspoon mustard seeds
🪴 1 teaspoon cumin seeds
🪴 A few curry leaves
🪴 Salt to taste
🪴 Chopped coriander leaves for garnish
🪴 Lemon

Instructions:
🌄 Heat oil in a pan over medium heat.
First, fry peanuts, potatoes, and pumpkin in oil and then place them in a bowl.

🌄 Then add mustard seeds, cumin seeds or curry leaves and let them splutter.

🌄 Add chopped onions, green chili. Saute until onions turn translucent.

🌄 Add chopped tomatoes ,salt and cook until they turn mushy.

🌄 Add fried potato or pumpkin and cook for a few minutes until they are partially cooked.

🌄 Add the samolina to the pan. Mix well to combine.

🌄 Pour 2 cups of water into the pan. Stir well to avoid lumps.

🌄 Cover and cook on low heat for 5-7 minutes or until the suji is cooked and the water is absorbed. Then add peanuts coriander leaves and lemon mix well with semolina.

🌄 Garnish with chopped coriander leaves and Serve hot.


Enjoy it as a wholesome breakfast option or as a light meal any time of the day!
