First of all, I would like to wish all the mothers and those who stands as mothers for others and help others too, A HAPPY MOTHERS DAY!!!❤️.

And because of that, I will write about my beautiful day!

Let me share first these pictures to start the day full of energy and nature beauty given by the almighty God, these were taken in Bicol Region the place of my father. A good place to walk and to relax too. A good vacation place for everyone! Many people from different places visiting different tourist spots of the province. Fresh fishes and seafood both from sea, river and lakes that you can buy in cheaper price of Good quality. The price depends on the variety of the fish but you can save a lot because you can buy directly from the fishermen.

So as I woke up this morning I offered a solemn prayer to our God Almighty in Jesus name!🙏.

After that I bought some foodstuff, fresh vegetables and fruits..and live fish I cooked fish stew..and that fish has given me the hard time, that I need to ask help from my neighbor to make the fish behave heheheh..next time I will not going to buy a live fish, stubborn fish keep on jumping from the table hehehehhhe I was just got attracted to it that was why the crazy me also bought that fish like the other people in the market, that is catfish, usually found in Rice Fields, best for fish soup.

Here are the vegetables I bought for stew. All were my favorite and I got them a fresh and cheaper price.

I also bought few kilos of Mango, this is one of my favorite fruits, I'm thinking of what sweets I'm going to make for that..like Mango shakes, mango Ice cream, or Mango fruit cake. Ahw! Whatever!!! Hehhe the most important there is the mango! That's it! Hehe.

So as I reached home I cook and spent my time with Nico helped him with one of his projects and then I looked for some photos with my beloved Mom. I am missing her. I missed the time that we spend Sundays at the Mall and other beautiful places..like in this photo

Looking at the photo, made me remember all the happy moments we spent together, it gave me so much happiness and smiles...family is home..no matter what condition we are facing or going to be facing in the future. I hope everything is going to be alright, I am now positively accepting everything..and live life every moment at its best..to happily face every challenge..and just be happy. I hope this is a good decision may God help us.

Around 2 PM I planted a Mayana plant given by my neighbor..

And I also bought some things for her like the Rose and the cake..though I know she couldn't eat much of the the cake and at least she knew that I have something for her..and you know what My beloved Mom smiled happily. heheheh..she said.."Your happy feet is ready to do some adventure again, you take good care" hehehe the happiness I felt that moment, was overflowing, Mom told me that because I am recovering from the heatstroke.

This is truly a beautiful day..a sublime one...with all the great feeling of love and affection..hope and peace! That even in the middle of a huge challenge there are also things and people that giving me the reason to smile like the people living in my heart..my beloved..family!! ❤

I want to share also some balanced and healthy breakfast we usually prepare.

So here is one Breakfast Meal that I always try to provide for my family.

I loved seafood..that is why in a day or some days in a week there is always the presence of any seafood dish on our table.

Creamy Prawn Pasta

I have here the Prawn pasta..it is so easy to cook. I use egg noodles but any type of noodles will do..you just need the pasta, prawns, all-purpose cream, celery, tomatoes, some spices, and black pepper or you may add some vegetables too if you want like carrots, beans, cabbage, or other meats instead of prawn. I did not add any vegetables because I also have a vegetable soup dish here...

Brown bread

I also have here the brown bread, which is more healthy and fewer calories and Mom also needs this type so that is what I provide to them. When it comes to plain bread, I also use white bread when I do some sandwiches that have complete nutrients because of the meat and spread that I have used

Vegetable Soup

So here is the Vegetable Soup with quail eggs..it is very healthy..there are beans, carrots, mushrooms, corn kernel, tomatoes sweet potatoes and celery..with evaporated milk..and I have used butter instead of oil..this is a very simple soup and easy to cook..and most of all very healthy.

If your family and loved ones are sick good to provide them with healthy food so they will gain their energy back..of course, pray for them because it's hard to see them in any pain. If only possible that we could absorb their pain so they wouldn't feel it..but because it is impossible one way to show them our love is by giving them healthy food..and tell them to eat well so they could get well soon.💕

Papaya fruit

And fruits..any type of fruit is good, we always have a papaya fruit, for it is rich in Vitamin A and C.

We eat the plain fruits (no other mixture like milk)at least an hour or 2 before any meal, to brush the intestine, but I think most people eat this after the main meal..well maybe it's their custom it's fine..but to my family, we are talking it before the main meal.

This will help to increase the strength of the Immune system so we could protect ourselves from bacterias and viruses and if we are already sick this still helps us to fight whatever illness we have in our body..it is very good for the skin and eyes too!

Milky chocolate drink

And the dessert aside Milk with chocolate..hot or cold will do. but I always give warm or hot milk chocolate drink for my family..or before I put an Ice cube or use cold water. I use got water first to dissolve the milk and chocolate then I will add tap or warm or hot water.

I am truly very much particular when it comes to the wellness of my family..even how much I am busy at work or most of the time sleepless, I always check everything most especially the expiration dates of any food...

And also today, I am here to share another food meals, and this time A Balanced meal for dinner.

Here in our home, dinner time is a more fun time to eat, more energetic compared to breakfast or lunch maybe because of the atmosphere and a lot of things to talk about for everything we did the whole day..so as we eat we also happily talking..even if we are only 3 persons here at home.

It is always good to eat while our loved ones and family are with us..seems like all the food on the table is appetizing no matter what the taste even if it's just a very simple food..as long as everybody is happy that is what matters the most.

And in the dinner foodie that I am featuring here mostly seafood, our family's favorite..but of course, it should be almost balanced. hehe, I said "almost" because we should admit that it's really hard to follow the perfect balanced meal without the little bit of junk food mixed..hehe!

Grilled Squid with vegetables and lemon inside

This dish is so yummy and best to eat while still hot...it is so tasty, before grilling I marinate it with lemon, lime, or pineapple juice with black pepper to make it tastier, but if Mom is the one who marinates, she also adds chili powder for Nico @czander. Squid is also best in sweet & sour dishes and Adobo (Filipino dish). I put it in banana leaves instead of foil to add a delicious aroma..banana leaves are available in every market here for those who use them for grilling and making sweet dishes.

Chopseuy with Chicken Liver

Here is the Chopseuy, mixed vegetables, including Broccoli, Cauliflower, Chicharo, Cabbage, Beans, Corn kernel, Carrots, Chicken Liver, shrimp, and quail eggs.

I cook chop suey in different ways sometimes I mix chicken meat..other times Prawn or beef.

And it's my Mom's favorite, and you know what she loves it so much and I could see in her eyes how she appreciates what I have done...

Rice and Fish fillet

Here is the rice of course but Mom used brown rice, every time we have leftover fish I always make fish fillet or fish balls then dipped in mayonnaise w/hot sauce..there are a lot of dishes we could do in our excess foods I always having fun when I am trying to do some new dishes of my version.

Choco Mocha Ice Cream

And for the dessert here is chocolate mocha Ice cream..you could have some other dessert too, we always have dessert sometimes sweetened fruits or cake..in dinner time it is always on the table because All of us loved Ice cream..but controlled amount of it only.🍨

Potato Chips with Coleslaw

And if the family is still happily talking over dinner..here are the side dishes..potato chips with coleslaw..still a healthy food, you don't need to buy commercialized potato chips it is easy to make.. slice them very thin or the thickness of your choice then fried it deep in oil, then you already have your chips without preservatives..then coleslaw just cabbage, ketchup, ground beef, tomatoes, and mayonnaise or anything that you want to add...food preparation is so much fun thing to do..

Everything about the kitchen is good for me, I'm not saying I am a good cook but I loved to cook and I always do it happily, it gives me so much happiness..especially when Nico is joining me in baking or cooking..

I hope you like the dinner food suggestions that I have shared with all of you! And the recipes may not have originated from our country but we can do it and have our versions too.

Like what I have said All of us love Ice cream so I made my version of Ice Cream one time. Hehe, and it's also one way to Beat the heat during Summertime in a satisfying yet cheaper way. It was inspired by a Belgian Ice cream, the brand BELGIUM ICE CREAM, and it is truly delicious. I gave a promise to my angel @czander, I am going to buy an Ice cream for him, but it was not available, so I don't have any other choice but to make way and was pretty sure all of you never want to disappoint the people you love the most..and like this sweet kid was expecting, so as I reached home, I went to the kitchen, and look for something that I could get to make any sweet food, I never thought that I would be able to make an Ice cream that time hehe..but the ingredients I found in my kitchen gave me a very good idea. I don't have cookies BUT I got biscuits!!!..the Graham biscuits which are good for baking too...I saved almost 50% of price of branded ice cream, home made is more satisfying in less than 500 PHP you can have more than enough of the ice cream you really want.

Without further ado...let's start to make my version of:

BISCUIT AND CHOCO-CREAMY ICE CREAM🍨

INGREDIENTS:

🔸2 Medium Packs of Graham Biscuits
🔸2 Cans of Condensed Milk
🔸2 Packs of All-Purpose Cream
🔸600 grams of Milo powdered chocolate drink (Any choco powder will do)
🔸M&M choco candies,(toppings optional)

PROCEDURE

1. Pour the Condensed Milk into a bowl

2. Pour the All-Purpose Cream into a bowl with the condensed milk

5. Pulverize the Biscuits

6. Pour the pulverized biscuits into the Creamy Mixture and mix well

***7. Cover the container and put it into the Freezer for 6 hours ***

8. You can add chocolate candies, syrup, or anything you like to make it yummier and appetizing especially for the kids.

These are all very simple ingredients that could easily be found in the kitchen..inspired by an international recipe but my version is a Filipina version hehe, you can make them with other flavors like fruits, cookies, or coffee. Aha! Mocha ice cream or cheesy one..this will give you so much fun..when you become creative in the kitchen heheheh. My happiness was double that time because the sweet kid helped me to pulverize the biscuits..and he was so excited.

FOR THE SNACKS...

There so many foodstuffs in the commercial shops and stores that are so easy to buy or just by calling some food delivery service, after some time your snacks or any meals will be delivered in the comfort of your home...

I am not against commercial food products and fast food meals because I am also buying those types of foods most especially when I am running out of time or my little one is requesting something only available at that particular food shop, we need to accept that they are part of the modern way of living..we are in the generation of having a fast way of living.

But if ever we have the chance to make, cook or bake a homemade foodstuff..we should grab that opportunity because it is not only economical and practical, it is healthier because no preservatives added into it or if ever we couldn't avoid the preservatives because it is already mixed with some ingredients that we need. At least the risk for the negative effect on our body is lesser.

Aside from that, we could add some modifications to the actual recipe, like making it healthier, adding some new ingredients, enhance the taste..use more economical ingredients or totally change all the ingredients and just follow the same process of preparing and cooking that particular food.

And today, I will also going to show you my way of preparing and cooking a very healthy Vegetable/Meaty Foodie.

So here it is I hope you enjoy the process..hehehe..all the ingredients are so easy to find in your kitchen without the need to spend a lot of budgets BUT one thing is for sure your loved ones and family will go to appreciate and love it.

THE FRIED VEGETABLE-MEATY BREAD

FOR CREAMY MIXTURE

Ingredients

🔸Mayonnaise
🔸Grated Cheese
🔸Spinach
🔸Hard-boiled Egg sliced into very small pieces
🔸Spinach or any of this (/Cabbage/Grated Carrots or any easy to cook vegetables)
🔸Onion (diced)

Procedure

1. Put the diced hardboiled egg into the bowl then mashed it well
2.Add the onion and the vegetable of your choice (I used cabbage and spinach) Mashed it well with the egg
3.Add the Mayonnaise
4.Add the Grated Cheese
5.Add a little bit of black pepper
6.Mixed all the ingredients well till they become sticky

VEGETABLE/MEAT BREAD

Ingredients:

🔸White Bread
🔸Creamy Mixture
🔸Sausage (Beef, Pork, Chicken or Fish any meat of your choice will do)
🔸Eggs
🔸Bread Crumbs
🔸Butter (I used it instead of oil)

PROCEDURE

The most important thing here is to prepare it.. full of love and serve with a beautiful smile especially if it is for our loved ones and family!❤

You can also have this for breakfast and for small business, also good together with your children and family. A good parent/children bonding moments.

Wow, you really know your way around the kitchen. This post is outstanding, and that brown bread looks so spongy and beautiful, I can almost smell it through the screen. You more than earned all three prizes for this entry, but I was surprised you were the only entry for this challenge.

Either way an incredible post, so many dishes for folks to drool over.
